The grapes are harvested when fully ripe and then destalked. They are crushed before going into stainless steel vats where they are left to macerate and ferment with their skins. Throughout the whole of this process, temperatures are carefully controlled to develop the complex aromas typical of the variety as well as richness and soft round tannins. This wine is selected and controlled regularly by winemakers.
